Homemade Banana Cupcakes
It has been awhile since my last “Eats and Treats” post, so yesterday I decided to make homemade banana cupcakes! My new favorite and not the pre-packaged, just add water mix. My Modifications:
- 1 cup of melted butter
- 2 cups of sugar
- 3 ripened mashed bananas
- 2 beaten eggs
- 3 cups of flour
- 2 tsp. baking soda
- 2 tsp. vanilla
- 1/2 tsp. salt
I mashed the bananas with the eggs, added the flour, sugar, baking soda and vanilla and mixed well. The consistency is very gooey so be easy on scooping into muffin cups. I filled each cup just about to the top. Baking at 350 degrees for less than 15 minutes only because our oven uses bambola. (Gas Oven) I’ve made 17 cupcakes using my own changes. The recipe online called for cream cheese icing which I decided not to do.

This reminds me of a banana cake my mom made when we were kids. Much softer and sweeter then banana nut muffins right?
Yes, very soft in side with hard shelled outside and sweeter. Thanks for commenting… Time I whip up another batch!
